Clean & Delicious Pumpkin Cookie Dough Bites:
These delicious treats are easy and quick to make, and will be sure to satisfy your sweet tooth!
Ingredients:
- 1 can (15.5 oz) chickpeas
- 2 cups rolled oats
- ¾ cup pumpkin puree
- ¼ cup all natural maple syrup
- 1 tsp cinnamon
- ½ cup vegan semi-sweet mini chocolate chips
- ½ cup almond butter
Directions:
- Place can of chickpeas, ¼ cup maple syrup, ¾ cup pumpkin puree, 1 tsp cinnamon all into a food processor or blender until the mixture is a smooth consistency.
- Blend 2 cups of oats separately to create oat flour.
- Mix oat flour in with pumpkin chickpea mixture until thickened to dough.
- Mix in with the dough ½ cup of mini chocolate chips.
- Put in refrigerator to set. Cookie dough balls should appear slightly stiff and solidified.
Optional topper: Melt another ½ cup of vegan chocolate chips and drizzle on top of cookie dough balls.
