Easy Vegan Chocolate Almond Crisp Squares:

Get your chocolate fix here! You’ll be surprised at how easy and tasty these decadent bars are.

Ingredients:

  • 2 cup vegan semi sweet chocolate
  • ½ tbsp coconut oil
  • 2 cup coconut shreds
  • 1 ½ cups of rice crispy cereal (like Rice Chex)
  • ½ cup almond butter
  • Sea salt
  • ¼ cup crushed almonds

Directions:

  1. Melt 1 cup vegan chocolate with ½ tbsp of coconut oil in a bowl over a boiling pot of water to temper the chocolate.
  2. Crush up rice cereal and coconut shreds finely in a plastic bag (I used a wood kitchen hammer).
  3. Mix melted chocolate with coconut and rice cereal mix in a medium size bowl.
  4. Put chocolate crisp mixture into a 12 x 12 square pan.
  5. Put in to refrigerator to set.
  6. For the second layer, melt ½ almond butter (I prefer chunky) and spread on top bottom layer of chocolate mix.
  7. Put in refrigerator to set a second time.
  8. For the third and final layer, melt remaining 1 cup of vegan chocolate with ½ tbsp of coconut oil and pour on top of the almond butter layer.
  9. Top Off with a sprinkle of ½ cup coconut shreds, pinch of sea salt, ¼ cup crushed almonds.
  10. Finally, put the three layer bar into the refrigerator to set once more.
  11. Cut into small, bite-sized squares.
