Easy Vegan Chocolate Almond Crisp Squares:
Get your chocolate fix here! You’ll be surprised at how easy and tasty these decadent bars are.
Ingredients:
- 2 cup vegan semi sweet chocolate
- ½ tbsp coconut oil
- 2 cup coconut shreds
- 1 ½ cups of rice crispy cereal (like Rice Chex)
- ½ cup almond butter
- Sea salt
- ¼ cup crushed almonds
Directions:
- Melt 1 cup vegan chocolate with ½ tbsp of coconut oil in a bowl over a boiling pot of water to temper the chocolate.
- Crush up rice cereal and coconut shreds finely in a plastic bag (I used a wood kitchen hammer).
- Mix melted chocolate with coconut and rice cereal mix in a medium size bowl.
- Put chocolate crisp mixture into a 12 x 12 square pan.
- Put in to refrigerator to set.
- For the second layer, melt ½ almond butter (I prefer chunky) and spread on top bottom layer of chocolate mix.
- Put in refrigerator to set a second time.
- For the third and final layer, melt remaining 1 cup of vegan chocolate with ½ tbsp of coconut oil and pour on top of the almond butter layer.
- Top Off with a sprinkle of ½ cup coconut shreds, pinch of sea salt, ¼ cup crushed almonds.
- Finally, put the three layer bar into the refrigerator to set once more.
- Cut into small, bite-sized squares.
